Forest to Plate: Puffball Parmesan(ish)

puffballFriends often express surprise or even horror that Gregory and I dare to eat mushrooms that we forage in the wild. A few years ago I, too, would have feared eating any fungus I found growing in a field or in the woods. In fact, I even avoided getting close to wild mushrooms for fear of instant death. (Anyone who has seen my Flickr photos will know that is no longer the case!)

Like wild food in general, it is critically important to know how to identify what you’re eating, and there are some dangerous species out there. However, I also think there’s a lot of irrational fear among the public. Responsible foragers don’t eat everything they find willy-nilly; they learn how to identify one thing at a time until they are confident. Personally, I really enjoy this time it takes to learn about the world around us. It’s not just about the plant or fungus we’re eating; it’s learning about the ecosystem, honing our powers of observation, and finally learning how to cook with new ingredients. Although it may not be as quick and easy as running to the grocery store, it’s much more deeply satisfying. (Plus, we all know there are foods in our grocery stores that can be dangerous to our health, a well…)

As for mushrooms, Gregory and I have learned how to recognize a handful of easily identifiable ones and when we’re 110 percent certain that what we’ve found is safe, we enjoy the harvest.

Now that I’ve said all that, I must confess that I actually don’t enjoy the flavor or texture of most mushrooms – likely the result of avoiding them for many years due to being allergic to the common button/portobello mushroom. But I do love puffballs, which happen to be some of the best “beginner mushrooms” to identify. Puffballs have a velvety texture and slightly nutty flavor and, like tofu, they can soak up the flavors of whatever you cook them in. I especially like them grilled or fried.

Spotting the little (or BIG) white balls in pastures, woods, and lawns is always thrilling, and on a recent mountain hike we gathered a few for lunch the next day. I sliced them up, peeled off the tough outer layer, brushed each side with olive oil and a sprinkle of salt and pepper, and got them into a hot grill pan.

This wasn’t a specific recipe so much as an exercise in using what I had around the pantry, fridge, and herb garden, and what came about was a variation on an eggplant parmesan sandwich. Initially I lamented not having any mozzarella cheese, but I soon realized that the puffballs themselves would stand in for both the eggplant and the mozzarella. After grilling them for several minutes on each side, they turned soft and tender and slightly smoky. The slabs were fantastic on a bed of grilled bread, garlicky marinara, and arugula, topped with shards of hard cheese and a scattering of fresh basil. From forest to plate, a wonderful vegetarian meal!

Gregory and I traveled to Washington last week for the BlogHer Food conference. I love the city of Seattle, ate some inspiring meals (lots of in-season rhubarb, asparagus, and morels!), and met many friends, old and new … but what really filled my heart was the chance to poke around the forest and coast, nibbling on juicy salmonberries and saying hello to the rivers, lichens, and slugs. It is when I can touch and smell the earth that I feel I have gotten to know a place.

– Any pot packaged snacks are very easy to sneak to school in a form of a pencil pot. Just wrap the packaging in some wrapping or crafting paper and you’re set! A great way to sneak mini oreos, jelly beans or salty nuts to class.
– PEZ candy drops are so tasty and remind me of my childhood. Sneak them in class by hiding them in a notebook. You can smuggle so many in class for you and all your school friends!
– Chewy fruity drops are a perfect candy to hide in a box of coloring pencils! Switch up the normal coloring pencils with a shorter version and you get a lot of free space for candy! So smart!
– Skittles are small and convenient so sneaking them to school is very easy. Split a pencil pot in two halves with a piece of a cardboard. Now fill one half with pens and pencils and the other half with skittles!
– A giant gummy candy belt and hubba bubba are perfect treats to hide in a tape dispenser. This edible school hack is simply genius!
– Replace the erasers with meringues on your pencils! You get the most delicious and sneaky pencil toppers ever. Prank your teachers and school friends with your new DIY edible school supplies! If you want your desert to taste even better, squeeze some delightful chocolate sauce on to. Hide the chocolate in a clean non transparent glue bottle. You’ll be the funny school prank wars winner for sure!
– Take a box of crayons and switch the crayons with chewy candy sticks. Extremely delicious!
– Melody lollipops are so fun and you can hide one in your marker! This DIY school supplies idea is so creative !
